Labels do not change when the data on spreadsheet changes due to design.

Cause:

Labels that are added to a data map become text. They do not change when the data on the spreadsheet changes. This behavior is by design of Excel Data Map.

Solution:

If necessary, select the labels and manually change them on the data map.
